Kill floor to cold storage, with HACCP records an inspector can trust

Meat & Poultry Processing IT Services

In a federally inspected meat or poultry plant, product can't ship if your HACCP and sanitation records aren't there to back it up, and those records increasingly live in software, not on clipboards.

20+ Years Experience

At a glance

A single shift depends on production tracking, yield and grading data, label printers, scales, box tracking, shipping and the office ERP, with refrigeration and line controls running alongside.

When ransomware or a dead server stops labeling, product backs up in the cooler within hours.

We secure and support the IT side of processing plants in Texas and nationwide: plant-floor PCs, networks, ERP and production servers, Microsoft 365, backups and 24/7 SOC monitoring, coordinating with your controls integrators at the OT boundary.

IT that keeps lines running, labels printing, HACCP logs intact.

Production data, label printing and inspection records protected, so a cyber incident never becomes a product hold.

Meat & poultry plants

No records, no shipment

Every carcass, case and pallet in your plant leaves a data trail that inspection personnel, customers and your own QA team depend on. When the systems holding that trail fail, the line slows and product sits. Here's where plants get hit, and the IT changes that keep the floor moving.

01 · The pressure

A perishable product and a full cooler

Your shift starts with the production schedule, runs through grading, weighing and boxing, and ends with labeled cases scanned onto trucks. Critical control point checks, temperature logs and corrective actions get recorded as they happen. If the production server or label system goes down, cases can't be labeled correctly and product backs up in a cooler that wasn't built to hold an extra day. If HACCP records are lost, your QA manager faces a very hard conversation with inspection personnel.

  • CCP monitoring and corrective action records
  • Weights, yields and box labels at every station
  • Shipping scans tied to customer orders

02 · How it breaks

Shared floor PCs and a flat network

Plant floor terminals are often shared by every worker on a shift, logged in under one account that never locks. The production network, office PCs and the refrigeration vendor's remote access box all sit on the same flat network. One phished email in purchasing gives an attacker a foothold, and from there ransomware reaches the production database and label servers in a single night. Washdown kills hardware too, so failing PCs get swapped for whatever's on the shelf, unpatched.

  • One shared login on every floor terminal
  • Office, production and vendor gear on one network
  • Replacement PCs pulled from a shelf unpatched

03 · What we change

Segmented floor, named access, protected records

We split office, production and controls into separate network zones with a firewall between them, and we coordinate with your controls integrator and refrigeration contractor before anything touches their side. Floor terminals get badge or PIN sign-in so actions are attributable. Vendor remote access moves behind an approved, logged gateway. Production and QA databases get immutable backups with restore tests, and every endpoint gets managed detection with 24/7 SOC monitoring.

  • Office, production and controls zones separated
  • Attributable sign-in on shared floor terminals
  • Immutable backups of production and QA data

04 · The after

Electronic records that stand up to review

Your plant manager stops worrying that one bad email can shut down labeling. When a customer audit or a third-party food safety audit asks how electronic records are controlled, your QA lead shows sign-in logs, access lists and backup results. Your insurer gets real answers about segmentation and monitoring. And if something does go wrong, you have a rehearsed plan for getting production data and label printing back before the cooler fills.

  • Electronic records with access logs for auditors
  • A recovery plan rehearsed before you need it
  • Insurer questions answered with evidence

What We Offer

Comprehensive solutions tailored for Houston-area businesses

Production & Yield Software Support

Systems like Marel Innova and CSB-System track product from receiving through shipping. We support the servers, databases and workstations underneath them, coordinate upgrades with the vendor and plan downtime around kill days and sanitation shifts, so updates don't land in the middle of production. We also keep the vendor's remote access under control.

Plant Network Segmentation

We design separate network zones for office, production and controls, with firewall rules that allow only what each zone needs. Changes near refrigeration, line PLCs or other equipment are planned with your controls integrator or OEM, because we secure the boundary and leave changes inside the equipment to them.

Washdown-Ready Endpoints

Floor PCs and label stations live in wet, cold, high-pressure-wash conditions. We standardize rated hardware, image every replacement to a patched baseline before it goes on the floor and keep spares ready, so a failed terminal is swapped quickly without bringing an unmanaged machine onto the network.

HACCP & Sanitation Record Protection

Whether your HACCP monitoring and SSOP records live in a QA platform, a spreadsheet or your production system, we make sure they're backed up immutably, access is controlled and changes are logged. Your QA team can show inspection personnel and auditors a trustworthy record history.

Label & Scale Station Reliability

Labels carry weights, dates, establishment numbers and lot codes, so a print failure stops shipping. We support the label servers, templates storage, printers and network connections to scales, and we coordinate with your scale and printer vendors for calibration or hardware issues outside the IT layer.

Vendor Remote Access Control

Refrigeration contractors, equipment OEMs and software vendors all need remote access sometimes. We replace always-on tools and shared VPN accounts with a gateway that requires approval, records each session and shuts off when the work ends, so your plant isn't open to whoever compromises a vendor.

Less Risk of a Product Hold

When production and QA records are protected and recoverable, a server failure or ransomware attempt is much less likely to leave you unable to support the product you've already made. That keeps a technology problem from becoming a food safety documentation problem.

Faster Customer Audits

Retail and foodservice customers audit your plant and increasingly ask about electronic records and cybersecurity. You'll have access logs, backup tests and a written incident plan on file, so those sections of the audit go quickly.

Downtime Planned Around Production

We schedule patching and upgrades around your kill schedule, sanitation crews and shipping windows. Engineers work business hours, with after-hours emergency response for active incidents, because plants don't stop at five and a second shift shouldn't be left on its own.

Clear Lines With Your Controls Team

We document where IT ends and your OT begins, and we coordinate with your integrators instead of making changes on their equipment. That keeps responsibility clear and avoids the finger-pointing that slows recovery after an incident.

Our Process

1
Tour the plant with your plant manager, QA lead and maintenance supervisor to document every floor PC, label station, server and vendor connection.
2
Map where HACCP, sanitation, production and shipping data live, and which systems the line can't run without.
3
Design network zones for office, production and controls, reviewing any change near equipment with your integrator first.
4
Replace shared floor logins with badge or PIN sign-in and move vendor remote access to an approved, logged gateway.
5
Back up production and QA data immutably, then run a restore test timed against how long your cooler can hold product.
6
Monitor endpoints with 24/7 SOC coverage and meet quarterly to review incidents, audit findings and planned plant changes.

Frequently Asked Questions

Will you touch our PLCs or refrigeration controls?▼
No. We secure the IT side and the boundary between IT and your controls network. That includes firewalls between zones, remote access gateways and monitoring at the edge. Anything inside a PLC, HMI program or refrigeration control panel stays with your controls integrator, refrigeration contractor or the equipment OEM. When a change at the boundary could affect equipment, like a new firewall rule, we plan it with them and schedule it during a non-production window so nobody is surprised on the floor.
Our HACCP records are electronic now. What should we be protecting?▼
Three things: availability, integrity and history. You need the records to exist when inspection personnel or an auditor asks, you need confidence nobody altered them after the fact and you need to retain them for as long as your HACCP plan and the regulations require. We set up role-based access, logging of changes, immutable backups and retention settings in whatever system you use. Your QA team and counsel decide what the records must contain; we make sure the systems hold up.
How do you handle shared PCs on the production floor?▼
Shared logins make it impossible to tell who did what and usually mean the session never locks. We set up fast sign-in using badges or PINs so workers aren't slowed down, lock stations after inactivity and restrict each terminal to the apps it needs. For stations that genuinely must stay logged in, like a label station, we lock it down to a single app with no browser or email. That shrinks the attack surface without adding steps to the shift.
Food companies have been hit by ransomware. How do you reduce that risk?▼
By making sure one compromised mailbox can't reach the production floor. That means MFA on email, segmentation so office machines can't talk directly to production servers, managed detection with 24/7 SOC monitoring on every endpoint, vendor access that's off by default and backups attackers can't encrypt. We also write a recovery plan that lists which systems come back first, usually production tracking and label printing, so you can keep shipping while the rest is restored.
Do you support small, single-plant processors?▼
Yes. A single-plant processor has the same records obligations as a large company with far less IT staff. We often act as the whole IT department, or support the one office person who's been handling it on top of another job. The core work is the same: protect the records, segment the network, secure email and back up the production system. We size the tools to your plant rather than bringing an enterprise program you don't need.
Can you help with export documentation systems?▼
We support the IT environment your team uses to work in FSIS's PHIS export module and any customer or broker portals: the workstations, browsers, accounts and MFA. We can't act inside PHIS for you, and the export requirements themselves belong to your export staff and FSIS. Where we help is making sure the people who need access have it, the accounts are protected and leaving employees lose access the same day.
Do you provide Meat & Poultry Processing IT Services in Houston and nearby areas?▼
Yes. LayerLogix is based in the Greater Houston area and delivers meat & poultry processing IT services to businesses across Houston and the surrounding communities, including The Woodlands, Spring, Katy, Sugar Land, Conroe, Cypress, and Pearland. For most Houston-area clients we can be on-site the same day when something needs hands-on attention, and our help desk is available during business hours, with after-hours emergency support. Call 713-571-2390 to check coverage for your specific address.
What does Meat & Poultry Processing IT Services cost for a Houston business?▼
Pricing depends on your size and what you need, so we do not publish a one-size-fits-all number — but Houston businesses generally pay a flat, predictable monthly fee rather than surprise hourly bills. We start with a free, no-obligation assessment of your current setup, then give you a clear quote in plain English with no hidden costs. That way you know exactly what you are getting and what it costs before you commit.
